German Spiced Apple Cake with Cream Cheese Frosting

Ingredients

German Spiced Apple Cake

  • 3 large eggs
  • 2 cups granulated sugar
  • 1 cup oil of choice I used olive oil, but you can use canola, avocado or vegetable oil (you can also substitute with applesauce)
  • 1 teaspoon vanilla extract
  • 2 cups flour Can also use 1/2 whole wheat flour and 1/2 all purpose flour
  • 2 teaspoons ground cinnamon
  • ½ teaspoon nutmeg
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 4 cups tart apples peeled and very finely chopped or grated (I used Granny Smith)
  • 1 cup chopped pecans or walnuts toasted if preferred

Instructions

German Spiced Apple Cake

  • Preheat oven to 350F and spray a 9x13-inch pan with cooking spray.
  • In a large bowl, whisk sugar, eggs, oil, and vanilla until smooth.
  • In another bowl, mix flour, cinnamon, nutmeg, baking soda, and salt. Combine with wet ingredients.
  • Fold in apples and nuts. Spread batter into the pan and bake for 45–55 minutes, until a toothpick comes out clean. Cool completely.

Cream Cheese Frosting

  • Beat cream cheese and butter until smooth. Add vanilla, salt, and confectioners' sugar; beat until creamy.
  • Spread over cooled cake and garnish with extra nuts if desired.

Notes

  • If you don't want to frost, you can dust with powdered sugar to give it a nice look.
