Easy Strawberry Cream Cheese Pie

Homemade Graham Cracker Crust or 1 Pre-made graham cracker crust
- 1 ½ cups graham cracker crumbs 12 full sheet graham crackers crushed into crumbs
- ¼ cup granulated sugar or brown sugar or use a combo of both
- 6 Tablespoons unsalted butter or salted butter melted or coconut oil melted (add a dash of salt if using unsalted butter if desired)

Homemade Graham Cracker Crust or 1 Pre-made graham cracker crust
Mix graham cracker crumbs and sugar in a bowl. Pour in melted butter/coconut oil and mix with a fork until all the crumbs are wet.
Pour the mixture into a pie plate or springform pan. Use the bottom of a clean measuring cup to press the crumbs firmly into the bottom and sides of the pan, molding them into a crust shape. If using a pie plate, press the crumbs up the sides with your fingers or use a measuring cup to press the crumbs into the pan.
For a crisper crust, bake this crust for 8-10 minutes at 375F. Or, chill it for 10-20 minutes if it's for a no-bake recipe.
Cream Cheese Filling, Strawberry Fillings & Whipped Cream Layers
In a large mixer bowl, beat the cream cheese and sugar until well combined and smooth. Set this mixture aside.
In a separate mixing bowl fitted with the whisk attachment, whip the heavy whipping cream and powdered sugar until stiff peaks form.
Measure out 1 & ½ cups of the whipping cream mixture out for the whipped topping border and set aside.
Mix the remaining 1 & ½ cups of whipped cream into the cream cheese mixture until combined.
Transfer the cream cheese filling into the graham cracker crust and smooth it out.
Spoon the strawberry pie filling on top of the cheesecake.
Pipe a border with the reserved whipped cream and add place some fresh chopped strawberries to the whipped cream border.
Place pie in fridge for 3 hours or overnight before serving.
