Easy Blueberry Crisp

This quick and easy blueberry crisp recipe is a cozy dessert that’s simple to make and full of flavor. Juicy blueberries, a golden oat topping, and the sweet smell of something delicious baking in the oven.

Ingredients

Crisp Topping

Blueberry Filling

  • 2 21 ounce Lucky Leaf Blueberry Filling
  • 1 cup fresh blueberries

Instructions

  • Preheat the oven to 375°F. Spray an 8x8-inch baking dish with non-stick cooking spray.

Make the Crisp Topping

  • In a medium bowl, cut 8 tablespoons unsalted butter into 8 pieces and place in a small microwave-safe bowl. Microwave in 20-second bursts until mostly melted, 40 to 50 seconds total. Set aside to cool slightly. Add in the all-purpose flour or gluten-free all-purpose flour blend, brown sugar, vanilla extract, cinnamon and salt to the bowl and stir to combine.
  • Add in the old-fashioned rolled oats and stir to combine.
  • Refrigerate for at least 5 minutes or until ready to use.

Blueberry Filling

  • In the prepared pan, add the blueberry filling and spread it out evenly, then add the fresh blueberries on top.

Assemble the Crisp

  • Sprinkle the crisp topping on top of the blueberry filling and place in the oven to bake for 35-40 minutes and the filling is bubbling.
  • Let cool for at least 15 minutes before serving. Top with vanilla ice cream if desired.
