  • 1 box favorite Carrot Cake Mix plus instructions how to bake cupcakes on box, with eggs, oil and water.

  • ½ cup unsweetened cocoa powder
  • Chocolate sprinkles
  • Optional decoratives: Cadbury eggs gummy bunnies, jelly beans

Instructions

Carrot Cake Cupcakes Recipe

  • Preheat oven to 350°F. Line cupcake pan with paper liners and set aside. Make boxed mix cupcake recipe or make these homemade cupcakes!
  • Dry Ingredients: Whisk together the flour, baking soda, baking powder, cinnamon and salt in a bowl. Set aside.
  • Wet Ingredients: In a large bowl, using mixer, beat the eggs for 2-3 minutes. Add in sugar, oil, Greek yogurt/sour cream and vanilla and mix until combined.
  • Gradually add in dry ingredients and mix together until combined. Fold in carrots.
  • Fill cupcake liners 2/3 of the way full and bake for about 18-22 minutes, or until a toothpick comes out clean. Remove from oven and allow to cool.

Cream Cheese Frosting

  • To make cream cheese frosting, using mixer, mix together the cream cheese and butter. Slowly mix in the powdered sugar. Add in vanilla and mix until combined.

Chocolate Cream Cheese Frosting

  • To make chocolate cream cheese frosting, Make the cream cheese frosting and then add in unsweetened cocoa powder. Beat until well-incorporated into the frosting & be sure to scrape the sides and bottom of the bowl so that all ingredients are well-combined.
  • Frost completely cooled cupcakes.

Notes

This recipe makes 24 cupcakes, halve recipe for 12 cupcakes.
