  • Preheat oven to 350°F. Line a 9x5 loaf pan with parchment paper and spray with non-stick cooking spray.
  • In a large bowl, mash 3 ripe bananas. Add 1/2 cup cottage cheese, 1/4 cup oil or applesauce, 1 teaspoon vanilla, 2 eggs, and 1/4 cup sweetener. Mix well with a whisk.
  • Add 2 cups flour, 1/4 teaspoon salt, 1 teaspoon baking soda, and 1 teaspoon cinnamon. Combine without over-mixing. Fold in any add-ins like chocolate chips or nuts if desired.
  • Transfer batter into the prepared loaf pan.
  • Bake 50-55 minutes or until a toothpick comes out mostly clean.
  • Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Storage: Store wrapped at room temperature for up to 3 days, refrigerate for up to 1 week, or freeze for up to 3 months.
Gluten-Free: Use 1 1/2 cups gluten-free flour plus 1/2 cup almond flour, or 2 cups oat flour.
Lower Sugar: Use very ripe bananas and reduce sweetener to taste. Sugar-free maple syrup also works.
Cottage Cheese: Small curd blends most smoothly. Full-fat or low-fat both work.
