Best-Ever Coconut White Chocolate Chip Cookies

These Best-Ever Coconut White Chocolate Chip Cookies are so delicious packed with rich, tropical flavors and melt-in-your-mouth goodness. Imagine biting into a buttery, chewy sugar cookie bursting with creamy white chocolate and lots of coconut!

  • Preheat oven to 350 degrees and line 2 baking sheets with parchment paper and set aside.In a large mixing bowl, add the butter, sugar and brown sugar, using a mixer cream the mixture until light and fluffy.
  • Add in the egg and vanilla extract until well combined.
  • Next add the flour, baking soda and salt to the wet mixture and mix together until just combined.
  • Add in the sweetened shredded coconut and white chocolate chips and stir until just combined.
  • Using a large cookie scoop (¼ cup) scoop the cookie dough onto the baking sheets, 6 per sheet. If you want, you can add some coconut to the tops of the cookies, to get a toasted coconut on top of your cookies while they bake or roll them in the coconut.
  • Bake for 12-15 minutes and let cookies cool 5 minutes before removing from baking sheet. Add some white chocolate chips to your cookies when they come out of the oven if you want to display the white chocolate chips.
