Preheat oven to 350 degrees and line 2 baking sheets with parchment paper and set aside.In a large mixing bowl, add the butter, sugar and brown sugar, using a mixer cream the mixture until light and fluffy.
Add in the egg and vanilla extract until well combined.
Next add the flour, baking soda and salt to the wet mixture and mix together until just combined.
Add in the sweetened shredded coconut and white chocolate chips and stir until just combined.
Using a large cookie scoop (¼ cup) scoop the cookie dough onto the baking sheets, 6 per sheet. If you want, you can add some coconut to the tops of the cookies, to get a toasted coconut on top of your cookies while they bake or roll them in the coconut.
Bake for 12-15 minutes and let cookies cool 5 minutes before removing from baking sheet. Add some white chocolate chips to your cookies when they come out of the oven if you want to display the white chocolate chips.
