Preheat oven to 350 degrees.
Line an 8x8 baking pan with parchment paper for easy removal and spray with non-stick cooking spray.
Whisk together the egg to blend in a small bowl, set aside.
In a microwave-safe bowl, melt the butter and let cool.
In a large mixing bowl, using a mixer or wooden spoon, mix together the cake mix, melted butter, egg & vanilla until just combined, without overmixing. This will be a very dense batter.
Add in the white chocolate chips and fold them to combine so they are evenly distributed.
Spoon and spread the red velvet cake batter into the prepared baking pan, so all edges and center have the same thickness to cook evenly.
Bake brownies for 20-25 minutes. When you touch the top, the edges will feel firm but the middle will still be a little soft. This is so the center stays rich and gooey. If you want a firmer brownie, bake for an additional 5 minutes for a total of 30 minutes.
Remove brownies from the oven when done and let cool for 30 minutes. Once cooled, lift the parchment paper from the pan and place the baked brownies on a cutting board and cut into 9 large or 12 small squares and enjoy!
