Purely Amazing Peanut Butter Cookies
Our newest peanut butter cookie obsession are these “Purely Amazing” Chewy Peanut Butter Cookies, that are so chewy, moist, and filled with robust peanut butter flavor. YUM! (Healthy & Gluten-Free too!)
Servings: 24 Cookies
- 3/4 cup Purely Amazing Flour (www.purelyamazingflour)
- 1/2 teaspoon baking powder
- Pinch or 2 of kosher or sea salt
- ¾ cup unsalted butter room temperature
- 1 cup creamy peanut butter
- ½ cup sugar
- ½ cup brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
n a bowl, whisk together the flour, baking powder and salt and set aside.
In another large bowl, using a mixer, cream the butter, peanut butter, sugars until light and fluffy, about 2 minutes. Beat in the eggs and vanilla.
Stir in the flour mixture and mix together until just combined. Cover and chill dough 1 hour. Also can be baked right away, but you need to use a cookie scoo
Preheat oven 375 degrees and line a couple sheet pans with parchment paper.
Use a 1 or 2 ounce scoop and place on cookie sheets 2-3 inches apart.
Bake 11-14 minutes or until the cookies are just set and the edges start to turn golden brown. Let them cool for a few minutes and then transfer to a wire rack to finish cooking. Removing them too soon will result in them breaking apart or crumbling, so don’t! :)

I like to add a couple extra tablespoons of coconut flour to the recipe sometimes. The dough is a soft consistency, so it's allowable. After mixing the dough, I like to let it sit in a bowl on the counter for a few minutes to let it breathe a bit and then put the dough in the fridge for another few minutes and then scoop out the dough if I want them sooner than later. I scoop 2 rows of 4 cookies (8) on a baking sheet, these cookies do spread out. Feel free to add some chocolate chips, peanut butter chips or frosting with sprinkles! Hope you enjoy!
