  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • ½ cup unsalted butter softened or partially melted or melted, just make sure it’s not hot when mixing with eggs, milk and Greek yogurt/sour cream!

  • 2 cups apples chopped into small cubes

Optional Glaze Recipe

  • 1 cup powdered sugar
  • 3 tablespoons milk of choice
  • 1 teaspoon vanilla

Instructions

  • Preheat your oven to 425. Line a muffin pan with muffin tins or cupcake liners and spray with non-stick cooking spray. Set aside.

Crumble Topping

  • Mix together your crumble topping ingredients in a bowl and combine with a fork or with your fingertips. Place crumble mixture in fridge while you make the apple muffins.

Apple Muffins

  • In a separate bowl, mix or whisk together your dry ingredients (flour, baking powder, sugar, salt & cinnamon), set aside.
  • In another large bowl, using a rubber spatula or wooden spoon, mix together the wet ingredients (milk, butter, Greek yogurt/sour cream, eggs & vanilla) for the muffins. Make sure to use very softened butter or partially melted butter but make sure the butter isn't hot!)
  • Slowly begin mixing in your dry ingredients for the muffins into the wet ingredients a little at a time, blending as you continue adding in the dry ingredients.
  • Fold or mix in the chopped apples.
  • Using a large cookie or ice cream scoop, fill your muffin tins/liners all the way to the top.
  • Get the crumble mixture out of the fridge and crumble it up as you like and sprinkle it on top of the muffins.
  • Bake for 18-20 minutes.

Glaze

  • For glaze on top, just whisk together the milk and powdered sugar in a bowl and drizzle on top of the muffins about 10 minutes after they’ve cooled.
  • Serve immediately or store in an airtight container for up to 2 days.
