Best Strawberry Cobbler

Ingredients

Strawberry Mixture

  • 3 ½ to 4 cups fresh ripe strawberries hulled & diced (can also use frozen)
  • ¾- 1 cup granulated sugar

Cobbler Mixture

  • 1 cup + 2 tablespoons all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup granulated sugar
  • 1 cup milk of choice warm (I used almond milk)
  • 1 teaspoon vanilla extract
  • 6 tablespoons unsalted butter melted & cooled

Instructions

  • Preheat the oven to 350°F and grease a 9×9 inch pan.
  • Melt 6 tablespoons of butter and let it cool down (for the cobbler crust), while you start prepping for the strawberry and cobbler mixtures. 

Strawberry Mixture

  • Toss together the strawberries and sugar well with a spoon. Mixture should become a little syrupy. Set aside.

Cobbler Mixture

  • In a large bowl whisk together flour, baking powder, salt and sugar.
  • Add in the warm milk, vanilla extract, and cooled, melted butter and gently stir until combined without over-mixing so the cobbler crust comes out fluffy and not rubbery or dense-like. Lumps in the mixture are ok!

Assembling Cobbler

  • Pour cobbler batter evenly into the prepared dish.
  • Spoon strawberries on top of the batter. I added in the syrup too, just drizzled it on top, BUT DO NOT STIR mixture.
  • Baked for 45-48 minutes on the middle rack or until slightly golden brown.
  • Remove from oven and let cobbler rest for a few minutes before serving.
  • Serve with ice cream, whipped cream or top it off with some milk!
