Preheat oven to 350°F. Line cupcake pan with paper liners and set aside. Make boxed mix cupcake recipe or make these homemade cupcakes!
Dry Ingredients: Whisk together the flour, baking soda, baking powder, cinnamon and salt in a bowl. Set aside.
Wet Ingredients: In a large bowl, using mixer, beat the eggs for 2-3 minutes. Add in sugar, oil, Greek yogurt/sour cream and vanilla and mix until combined.
Gradually add in dry ingredients and mix together until combined. Fold in carrots.
Fill cupcake liners 2/3 of the way full and bake for about 18-22 minutes, or until a toothpick comes out clean. Remove from oven and allow to cool.
Shortcut Carrot Cake Cupcakes
1 box favorite Carrot Cake Mix, plus instructions how to bake cupcakes on box, with eggs, oil and water.
Cream Cheese Frosting
To make cream cheese frosting, using mixer, mix together the cream cheese and butter. Slowly mix in the powdered sugar. Add in vanilla and mix until combined.
Chocolate Cream Cheese Frosting
To make chocolate cream cheese frosting, Make the cream cheese frosting and then add in unsweetened cocoa powder. Beat until well-incorporated into the frosting & be sure to scrape the sides and bottom of the bowl so that all ingredients are well-combined.
Frost completely cooled cupcakes.

This recipe makes 24 cupcakes, halve recipe for 12 cupcakes.
