Super Easy Strawberry Brownies

Strawberry Cake Mix Brownies! These Super Easy Strawberry Brownies are so pretty in pink and full of strawberry flavor by using a strawberry cake mix shortcut!

Ingredients

Easy Strawberry Brownies

  • 1 box strawberry cake mix
  • 2 large eggs if adding cream cheese option, omit 1 egg
  • cup vegetable or canola oil
  • 1 teaspoon vanilla extract
  • Optional: If you want cream cheese in brownies add 4 Tablespoons softened cream cheese and omit 1 egg.
  • Optional: Add strawberry slices on top after pressed into pan or fold in 1/2 to 3/4 cup white chocolate chips to batter for more flavor options.

Strawberry Cream Cheese Glaze Option

  • 2 ounces cream cheese softened
  • 1 cup powdered sugar
  • 2 tablespoons strawberry preserves or jam could also puree or mash up some strawberries as well
  • Add milk if needed to thin out or more strawberry preserves

White Chocolate Drizzles Option

  • 4 ounces chopped up white chocolate or ½ cup white chocolate chips melted

Instructions

Easy Strawberry Brownies

  • Preheat oven to 350 degrees F. Line an 8×8 baking pan with parchment paper and spray with nonstick cooking spray.
  • In a large bowl, add the strawberry cake mix, oil and vanilla extract. Only add 1 egg if adding the softened cream cheese to the brownie batter, and use 2 eggs if not adding the cream cheese to the batter.
  • Mix all the ingredients together and if adding white chocolate chips to batter, add them in halfway through while mixing just until mixture is combined fully.
  • Press into the prepared pan with hands or back of spoon. Waxed paper works too, if you press down on it on top of the batter, then lift if off.
  • If you want to add sliced strawberries on top of brownie batter, do it now.
  • Bake for 18-22 minutes, until just done. Let cool completely.

Strawberry Cream Cheese Glaze Option

  • In a small bowl, whisk together powdered sugar, strawberry preserves and cream cheese together.
  • Add milk to thin out if needed. Spread over the cooled strawberry brownies.
  • Pour the frosting over the brownies and use the back of a spoon or an offset spatula to spread the frosting out evenly. Add sprinkles if desired.
  • Refrigerate so the frosting sets for 15 minutes or so. Cut into 16 squares, and enjoy!

White Chocolate Drizzles Option

  • Place in microwave for about 20 to 30 second increments until completely melted. With a fork or spoon, drizzle over entire pan of brownies. Let set up, then cut into brownies. Or cut into brownies, then drizzle.
