Ingredients You Need

Sour Cream Banana Bars Recipe

  • all-purpose flour
  • baking soda
  • salt
  • unsalted butter softened
  • granulated sugar
  • egg
  • sour cream
  • vanilla extract
  • 2-3 medium ripe bananas mashed, depending on your banana taste – 2 bananas were used in this recipe, but you can use up to 3 if you want, just remember they will be more dense, but still yummy!! 

Cream Cheese Frosting Recipe

  • butter at room temperature
  • package cream cheese, at room temperature
  • powdered sugar
  • vanilla extract

How to Make Sour Cream Banana Bars

Sour Cream Banana Bars 

  1. Preheat the oven to 350ºF. Spray a 9×13-inch baking pan with non-stick spray or parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda and salt, set aside.
  3. Using an electric mixer, in another bowl, cream together butter and sugar. Add in eggs, one at a time, mixing in between adding eggs. Beat in the sour cream, then the vanilla extract until incorporated, set aside.
  4. Add dry ingredients to the wet ingredients, then stir in the mashed bananas. Transfer the batter to the prepared baking pan.
  5. Bake until a tester inserted in the center comes out clean, 25-30 minutes.
  6. Cool the cake completely before frosting.

  1. Using mixer, in a large bowl, cream the butter and the cream sugar together in a bowl. Slowly add the powdered sugar and mix until completely smooth. Frost the cake with the frosting.

Sour Cream Alternative

I know some people might be turned off by sour cream.  So, as a replacement, you can always use plain Greek yogurt instead. As a note, just make sure it’s not flavored with vanilla, if you want the slightly tangy factor, like sour cream.

Cream Cheese Frosting Alternatives

I’m partial to cream cheese frosting especially with these bars…sooo good and tasty together, but these would be really good with a brown butter frosting as well.

  • As for the frosting, you can frost these with store-bought prepared cream cheese frosting if you want, or buy another other flavor for that matter.
  • You could also dust these banana lovelies with some powdered sugar if you want to cut down calories.

Storing Banana Bars

Store frosted bars for 4-5 days in an airtight container with the cream cheese frosting in the fridge since we they have cream cheese frosting. Can also be stored in the fridge or freezer.

If freezing, just thaw at room temperature or in the fridge.  Make sure to keep the bars covered in plastic wrap or an airtight container when thawing and place back in fridge if thawing at room temperature.

I made these last night to bring to my family’s Thanksgiving Day feast today… One thing I did switch up though is instead of regular confectioner’s sugar for the frosting I opted to use a Keto-friendly alternative! I used Swerve instead! It came out really really good! Just an idea though for anyone wanting to cut out some carbs and sugar but still wanting the taste!
