Overnight Cinnamon French Toast Bake

Need a delicious casserole to feed a crowd at breakfast or brunch?  This easy Overnight Cinnamon French Toast Bake is so easy to pull together you’ll want it every weekend and the holidays for sure!  It's the ultimate soft custard-like French toast with a super crunchy cinnamon-sugar on top! Just add some maple syrup for the finishing touches!

Ingredients

French Toast Bake

  • 1 loaf French bread or any bread like challah or sourdough can be used. (about 10 cups worth)
  • 7 large eggs
  • 2 cups milk of choice
  • ½ cup heavy cream
  • ½ cup granulated sugar
  • 1 tablespoon vanilla

Cinnamon Topping

  • ½ cup all-purpose flour
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup butter cold cut into chunks

Instructions

French Toast Bake

  • Cut loaf into cubes and set aside in a large bowl.
  • In another bowl or blender, mix together eggs, milk, heavy cream, sugar and vanilla. Pour evenly over bread and cover bowl with Saran Wrap and refrigerate overnight.

Cinnamon Topping

  • Mix together flour, brown sugar, cinnamon, and salt in a medium bowl or food processor.
  • Cut in butter with this mixture until crumbly and place in a Ziploc bag and refrigerate overnight as well.

How to Assemble

  • Grease or spray 9x13 baking pan and add soaked bread mixture to baking pan and spread out evenly.
  • Sprinkle crumbly mixture evenly over the bread mixture.
  • Bake at 350 for 45 minutes to 1 hour depending on how soft you like your French toast. I baked mine for 50 minutes an it was awesome. Great the next day as well!

Notes

HOW TO FREEZE: Wrap dish with plastic wrap then foil. It can keep for up to 2 months in the freezer. When you’re ready to eat thaw overnight in the fridge, remove all the wrapping and bake. If it been prebaked cook at 350 degree F for 20 minutes. If it has not been pre-baked, cook according to recipe directions
