Andes Chocolate Covered Graham Crackers

Ingredients

  • 10 oz. Ghirardelli Chocolate Melting Wafers or 2 cups Chocolate Chips semi-sweet or milk or combination
  • 8 graham crackers
  • Andes Creme De Menthe Baking Chips 10 oz (you won't use them all unless you're making more batches) or chop 12-14 Andes Candies up
  • optional: oil like canola vegetable or coconut to thin out chocolate (1 - 2 teaspoons)

Instructions

  • Prepare 1-2 baking sheets and line with parchment paper, set aside.
  • Place chocolate chips or wafers in microwave-safe container.
  • Microwave chocolate for 1 minute. Stir thoroughly (product keeps its original shape until stirred). If not completely melted, continue to microwave at 30 second intervals and stir until smooth. Add 1 - 2 teaspoons of canola or oil of choice to thin the chocolate if it's super thick.  AND Overheating will cause chocolate to seize, so be mindful of that.
  • Dip graham crackers one a time coating the graham cracker on both sides, using a fork and place on parchment paper.
  • Add chopped Andes candies to top.  Add some sprinkles for joy!
  • Let sit at room temperature until set.  To speed up process, place in fridge for 10-15 minutes.
