Healthy Chocolate Chip Cookie Dough Balls – GF option

These robust, hearty Healthy Chocolate Chip Cookie Dough Balls are quick and easy to make.  Made with ground oats, peanut butter, maple syrup and mini chocolate chips, these couldn’t be tastier and are definitely irresistible to the tastebuds!

Ingredients

  • 1 cup oat flour more if needed for consistency and depending on oats used.
  • ½ cup + 2 tablespoons peanut butter or nut butter of choice
  • 2 tablespoons maple syrup agave or honey, add more if want sweeter
  • 1 tablespoon butter or coconut oil melted
  • Optional: 1 teaspoon vanilla
  • Optional: Pinch of salt if no salt in nut butter)
  • ½ cup mini semi-sweet chocolate chips

  • Mix together all ingredients in a bowl until well combined and consistency reached.
  • Scoop into balls using small cookie scoop or roll into balls and store in fridge or freezer.

Notes

  • If you don’t have oat flour, you can easily make your own.
    Add oats to a food processor or blender and blend until coarse. Keep pulsing until the oats become a fine flour, with little to no flakes of oats remaining, depending on texture you wish for your recipes.
  • Use as needed in oat flour recipes and measure but it’s nice to know when grinding oats, there is an almost 1:1 ratio for rolled oats to ground oats , (if the recipe called for a 1/2 oat flour, simply measure just over a 1/2 cup of rolled oats). Oats also give a subtle hint of nuttiness when used in recipes.
  • Defrost for a few minutes before eating if freezing.
  • For vegan option, use maple syrup or agave,  vegan butter if using butter and non-dairy chocolate chips
