  • 1 cup oat flour more if needed for consistency and depending on oats used.
  • ½ cup + 2 tablespoons peanut butter or nut butter of choice
  • 2 tablespoons maple syrup agave or honey, add more if want sweeter
  • 1 tablespoon butter or coconut oil melted
  • Optional: 1 teaspoon vanilla
  • Optional: Pinch of salt if no salt in nut butter)
  • ½ cup mini semi-sweet chocolate chips

  • Mix together all ingredients in a bowl until well combined and consistency reached.
  • Scoop into balls using small cookie scoop or roll into balls and store in fridge or freezer.

  • If you don’t have oat flour, you can easily make your own.
Add oats to a food processor or blender and blend until coarse. Keep pulsing until the oats become a fine flour, with little to no flakes of oats remaining, depending on texture you wish for your recipes.
  • Use as needed in oat flour recipes and measure but it’s nice to know when grinding oats, there is an almost 1:1 ratio for rolled oats to ground oats , (if the recipe called for a ½ oat flour, simply measure just over a ½ cup of rolled oats). Oats also give a subtle hint of nuttiness when used in recipes.
  • Defrost for a few minutes before eating if freezing.
  • For vegan option, use maple syrup or agave,  vegan butter if using butter and non-dairy chocolate chips
