- 1 ⅔ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ½ cup + 2 tablespoons unsalted butter at room temperature
- 1 cup brown sugar packed
- 1 large egg + 1 egg yolk
- 1 tsp vanilla extract
Set oven to 350F
Line an 8×8 pan with parchment paper for easy removal and to cut cleanly. If you don’t use parchment, lightly grease the pan.
In a small bowl, whisk together flour, baking powder and salt to combine.
Cream the butter and sugar until fluffy. Add the eggs, one at a time, mix well. Add vanilla and mix in.
Add the flour mixture and mix until just combined.
Spread evenly in your pan and bake for 30-35 minutes — the blondies will be lightly golden. Don't over-bake.
Cool before cutting.
