Ingredients

Peach Layer:

  • 6-8 peaches, depending on size peeled, cored and sliced (5 to 6 cups depending how many peaches you want or you can use frozen peaches)
  • 1 cup granulated sugar
  • ¼ heaping teaspoon salt

Cake Cobbler Layer:

  • ½ cup unsalted butter
  • 1 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 3 teaspoons baking powder
  • ¼ heaping teaspoon salt
  • 1 cup milk of choice I used unsweetened almond milk, buttermilk also a good option
  • 1 teaspoon ground cinnamon

Instructions

  • Preheat oven to 350 degrees F.
  • Add the sliced peaches, sugar and salt to a large microwaveable bowl. Mix and microwave for about 2 minutes until sugar is dissolved. Also can cook on stovetop in saucepan over medium heat for a few minutes as well. Set aside.
  • Melt butter and add to a 9x13 inch baking dish.
  • In a large bowl whisk together the flour, sugar, baking powder and salt. Stir in the milk, and stir until just combined. Pour cobbler batter over the melted butter and spread out.
  • Spoon the peaches and juice over the batter.
  • Sprinkle cinnamon over the top of the batter.
  • Bake 40-50 minutes. Serve warm, it's delicious!

Notes

To substitute fresh or frozen peaches, you can also use canned peaches, use a 2 - 29 oz cans (larger) or 3 15- oz (smaller) cans of peaches, undrained and omit the sugar and salt above in the peach layer ingredients.
