Ingredients

Homemade Hocus Pocus Brownie Bites

  • 10 tablespoons unsalted butter melted
  • 1 ¼ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • ½ teaspoon salt
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • ½ cup all purpose flour
  • ½ cup mini chocolate chips

    Homemade Cosmic Frosting & Toppings

    • ½ cup unsalted butter softened
    • 2 cups confectioners' sugar sifted; plus more if necessary for frosting consistency
    • 2 teaspoons vanilla extract
    • 2 tablespoons milk or as necessary for consistency
    • Food coloring gel for frosting I used yellow/green, purple and orange
    • Rainbow chocolate chips or sprinkles of choice

    Or Make Shortcut Frosting - Buy a tub of vanilla frosting + food color gels

      Instructions

      How to Make Hocus Pocus Brownie Bites

      • Preheat oven to 350 degrees F and spray a mini cupcake tin or silicone mini cupcake pan with non-stick cooking spray.
      • Melt the butter in the microwave until melted. Once melted, add the sugar, cocoa power and salt and mix until smooth.
      • Add the vanilla and eggs and combine. Add the flour and chocolate chips until no more flour is visible.
      • Using a spoon or tablespoon cookie scoop, scoop the brownie mixture into the mini cupcake tins and bake for 13-15 minutes. There should be a total of 24.
      • If necessary, run a knife along the edge of the brownies to lift it out of the pan and let cool on a cooling rack before frosting.

      For Shortcut Brownies

      • Preheat oven to 350 degrees
      • It's simple. Just make your favorite brownie mix and mix according to ingredients needed. Continue with steps 4 & 5.

      Homemade Vanilla Frosting

      • Using mixer, beat the butter to cream it, about 2 minutes or until smooth and fluffy.
      • Add the confectioners' sugar, vanilla, and milk and beat until very fluffy. Depending on the stiffness and consistency of the frosting, and how you prefer it, add more milk to thin it. If you add too much, you can add some more confectioners' sugar.
      • Divide the frosting into 3 different bowls and add orange, purple and yellow/green color to make the colored frostings.
      • Add the frosting to the brownies in a smooth, even layer or pipe frosting on top of brownies by adding frosting to ziplock bags and snip corners to pipe on top of brownies. I do this step and then I use the back of a spoon and even it out a little.
      • Add rainbow chocolate chips. Let frosting set a few minutes before serving.

      For Frosting Shortcut

      • Buy a tub of vanilla frosting and divide the frosting into 3 different bowls and add orange, purple and yellow/green color to make the colored frostings. Continue with steps 4 & 5.
