Easy Butterscotch Pudding Layered Dessert

This no-bake Butterscotch Pudding Layered Dessert is so amazing! This luscious dessert features a graham cracker crust topped with cream cheese fluff, butterscotch pudding, whipped cream and toffee bits. Perfect for BBQ, potlucks, summer or when you're craving creamy butterscotch pudding!  YUM!

Ingredients

GRAHAM CRACKER CRUST

  • 1 ½ cups graham cracker crumbs or cookie crumbs for 9x13 pan, double graham cracker recipe if desired if you want a thicker crust.
  • 3 tablespoons sugar
  • 6 tablespoons melted butter

CREAM CHEESE LAYER

  • 16 ounces cream cheese softened
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla
  • 8 ounces Cool Whip

PUDDING LAYER

  • 1 ¾ cup milk can also double butterscotch pudding layer by using 3 1/4 cups of milk for 9x13 pan
  • 3.4 ounces instant butterscotch pudding can double butterscotch pudding layer by using 2 3.4 ounces instant butterscotch pudding for 9x13 pan

TOPPINGS

  • 8 ounces Cool Whip add 4 ounces more for 9x13 pan if desired.
  • Topping Choices: Toffee bits chopped Butterfinger bars, shaved chocolate, salted caramel or butterscotch sauce drizzled on top

Instructions

GRAHAM CRACKER CRUST

  • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter together.
  • Press the mixture into an 8×8, 9x9 or 9x13 dish. Flatten the mixture using the bottom of a flat glass. Place in the freezer for 30 minutes.

CREAM CHEESE LAYER

  • In a medium bowl, beat cream cheese and powdered sugar using a hand mixer. Fold in 8 ounces of Cool Whip. Spread over graham cracker crust.

PUDDING LAYER

  • For 8x8 or 9x9 dish - Combine the 1 3/4 cups milk and 1 pudding mix and whisk together for 1 to 2 minutes, or until smooth and thickened. Pour over cream cheese layer.
    For 9x13 pan, Combine the 3 1/4 cups milk and 2 pudding mixes and whisk together for 1 to 2 minutes, or until smooth and thickened. Pour over cream cheese layer.

TOPPINGS

  • Spread remaining Cool Whip on top and sprinkle with toffee bits, chopped Butterfinger bars, shaved chocolate, salted caramel or butterscotch sauce drizzled on top
  • Refrigerate for several hours before serving
