Homemade Chocolate Chip Cookie Dough Buttercream Brownies

Thick, rich chewy brownies frosted with a light, buttery, creamy cookie dough buttercream frosting adorned with chocolate chips. Hallelujah!

Ingredients

Homemade Brownies (OR you can use boxed Brownies, using their instructions.)

  • ¾ cup dutch-processed cocoa powder
  • ½ teaspoon baking soda
  • cup butter 1/3 cup + 1/3 cup, melted & divided
  • ½ cup boiling water
  • 2 cups granulated sugar
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon salt
  • 1 ⅓ cups all purpose flour

Cookie Dough Buttercream Frosting

  • 1 cup butter, softened
  • 4 oz cream cheese softened
  • ¾ cup light or dark brown sugar packed
  • 3 cups powdered sugar Add more if needed
  • ½ teaspoon salt
  • 2 teaspoons vanilla extract
  • ½ cup to 1 cup mini chocolate chips

Instructions

Make Homemade Brownies or Boxed Brownies

  • Preheat the oven to 350ºF. Grease or spray with non-stick spray a 9x13" baking dish: set aside. Line pan with parchment if you want easy removal.
  • In a large mixing bowl, whisk together the cocoa and baking soda.
  • Pour in 1/3 cup of the melted butter and whisk until smooth.
  • Stir in the boiling water until the mixture is smooth. (It will be thick.)
  • Whisk in the sugar and eggs with the remaining 1/3 cup melted butter.
  • Add the vanilla and salt and whisk until just incorporated.
  • Add in the flour and stir until just combined.
  • Pour and spread the batter into baking pan.
  • Bake for 35-40 minutes and do not over-bake.
  • Cool completely in the pan before frosting.

Cookie Dough Buttercream Frosting

  • Add the butter and cream cheese to a mixing bowl and beat with an electric mixer until smooth and creamy.
  • Add the powdered sugar, brown sugar, vanilla, and salt to the bowl and continue mixing until smooth and creamy.
  • Frost the completely cooled brownies and sprinkle with mini chocolate chips!

Notes

Can also some of the mini chips to the frosting and sprinkle on top as well.
