Delish Chocolate Chip Peanut Butter Oatmeal Bars

Ingredients

  • 1 cup unsalted butter softened
  • 1 ⅓ cup packed brown sugar add more if desired for more sweetness
  • cup white sugar add more if desired for more sweetness
  • 1 cup peanut butter or any nut butter, creamy or crunchy, no sugar as well if preferred.
  • 2 large eggs can add an extra egg or 2 for more richness, if desired.
  • 1 ½ cups all-purpose flour can also use a combination of 1/2 whole white wheat flour and all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups old-fashioned oats can use gluten free oats for gluten free option
  • 1-2 cups semi-sweet chocolate chips save out 1/2 for sprinkling on top.

Instructions

  • Preheat oven to 350.
  • In a large bowl, cream together butter and sugars for several minutes and then add peanut butter and beat in until smooth.
  • Beat in the eggs one at a time until well blended.
  • Combine the flour, baking soda, and salt into the wet mixture and mix until just combined.
  • Mix in the oats and 1/2 of chocolate chips until just combined.
  • Spread into 2 - 8x8 greased pans or a 9x13 greased pan, add saved out chocolate chips and sprinkle on top and bake for 25-30 minutes  for 2 - 8x8 pans or 20-25 minutes for 13x9 pan or until just light brown.
  • Don't over-bake for best results
  • Cool, cut and store in an airtight container.

Baking Tips & Flavor Options:
  • Feel free to add a couple tablespoons of honey or maple syrup to give a little more sweetness to these bars.
  • You could also add more brown sugar or granulated sugar if you wish to have more sugar in these bars.
  • Use healthy sweeteners like Lakanto or Swerve for cutting down calories.
  • Switch out old-fashioned oats with gluten free oats for gluten free option!
  • Switch out peanut butter with your favorite nut butter.
  • Add nuts, mini m&m's, any kind of chocolate chip flavors or dried fruits to make these bars even more tailored to your tastes!  Get creative and enjoy!
  • Add more oats if you desire, if you like a more oaty bar. You can increase about 1/4 to 1/2 cup. Adding too much will dry out bars.
  • Add an extra egg or two or more peanut butter to these bars if you wish to the batter, it will just make these bars even richer and delish!  
  • Add some cinnamon to the bars for a yummy cinnamon fall dessert!
  • If using salted butter, omit salt in this recipe.
