Preheat oven to 350 degrees. Line cookie sheets with parchment paper. Set aside
In a medium bowl, whisk together the baking soda, cream of tartar and salt together, set aside.
In another large mixing bowl, using mixer, add the butter, oil, granulated sugar and powdered sugar. Slowly add the baking soda, cream of tartar & salt mixture into the butter mixture. Mix until well-combined and creamy, 1-2 minutes.
Add the sour cream/yogurt, eggs and vanilla and mix until well-combined, 1-2 minutes, again scraping down the sides of the bowl as needed.
Add the food coloring/gel with with a toothpick to the mixture. Cookies will bake lighter than dough appears, so that will help with the color shade you are trying to achieve.
Add the flour and mix until no dry streaks remain and the mixture is evenly combined. As you are mixing, make sure to add more food color/gel if needed as you are mixing the cookie dough, making sure not to overmix.
Using a medium or large scoop, make balls of dough. Lightly spray the bottom of a flat-bottomed glass with cooking spray and dip the bottom of the glass into the sugar. Press each cookie into an even thickness about 1/4" to 1/2" inch dipping the bottom of the glass into the sugar between each press to get that crinkly edge.
Bake for 9-12 minutes until just set. Don't overbake, you don't want cookies to be brown on bottoms.
Transfer to a wire rack to let cool.
