Funfetti Sugar Cookie Cups {with Vanilla Buttercream Frosting}

Soft, fluffy, and the perfect sweet treat to make anyone jump for joy. *Clicking my heels* The cookie cups are baked with sprinkles and mini white chocolate chips in the cookie batter, then a swirl of vanilla buttercream frosting on top with more sprinkles. (We obviously can't get enough of those sprinkles!)

Sugar Cookie Cups

  • 2 3/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cornstarch
  • 1 cup butter softened
  • 1 1/4 cups granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Sprinkles
  • 1/2 cup Mini White Chocolate Chips

Vanilla Buttercream Frosting

  • 2/3 cup butter softened
  • 2 1/3 cups confectioners' sugar
  • 1 teaspoon milk
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • Optional - More Sprinkles!
  • More Mini White Chocolate Chips



  • Preheat oven to 375 degrees.
  • Grease a mini muffin tin with nonstick cooking spray.
  • Combine flour, baking soda, cornstarch and baking powder in a small bowl, set aside.
  • Cream together butter and sugar until fluffy. with mixer in large bowl.
  • Beat in egg and vanilla.
  • Gradually beat in dry ingredients until combined.
  • Roll into 1" sized balls or use small ice cream scooper (<---works perfect!) and place in muffin tins. Bake for 8 -10 minutes or until golden brown.
  • Let cool.

Vanilla Buttercream Frosting

  • In a bowl cream butter, then add in confectioners' sugar and salt and blend with mixer until well blended.
  • Add the milk and vanilla, then beat until smooth and creamy. (3 - 5 minutes or so).
  • Fill a piping bag with frosting, using a large star tip and start frost the cookies by starting in the center of the cookie, swirl around with even pressure and leave a cute peak at top.
  • Add sprinkles or other decoratives!

Vanilla Buttercream Frosting is a 1/2 batch (double recipe if you would use for 16 cupcakes)
