Sugar-Free Oatmeal Butterscotch Cookies

These cookies are great for when you want sugar-free cookies fast! No chilling the dough!  They are super yummy, easy-to-make hearty, delish soft oatmeal cookies bursting with delicious butterscotch flavor!  So good with a glass of milk on the side. Dunk away!

Ingredients

  • 1 ¼ cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup butter softened
  • ¼ cup healthy sugar alternative like Lakanto Sugar or something similar)
  • ¾ cup healthy brown sugar alternative like Lakanto Golden or something similar
  • 1.5 ounce sugar-free jello vanilla instant pudding mix
  • 2 eggs
  • 3 ½ cups quick-cooking rolled oats
  • ½ cup sugar-free butterscotch chips or chips of choice raisins (we used Lily Chips)

Instructions

  • Preheat oven to 375°F.
  • Mix flour with salt and baking soda. Combine softened butter, the sugars and pudding mix in large bowl using a mixer or by hand. Beat until smooth and creamy. Beat in eggs. Gradually add flour mixture, stir in oats and butterscotch chips using mixer until incorporated all together. Batter will be stiff.
  • Drop by 1/4 cup scoop or by teaspoon/tablespoon onto ungreased or parchment lined cookie sheet 2 inches apart. Press cookies down slightly.
  • Bake for 10 to 12 minutes for smaller cookies, 12-14 for larger cookies.

Notes

  • 20 Cookies for 1/4 cup Cookies
  • 30 Cookies for smaller Cookies
  • It is fine to use regular ingredients in place of sugar-free ingredients.
