Chocolate Chip Cookie Dough Bars

These bars are loaded with mini chocolate chips in an edible cookie dough and we even topped them off with even more chocolate. We even spruced them up with some sprinkles to give them a fun, festive flair, because honestly, who doesn't love sprinkles and cookie dough together?  They're the perfect no bake treat and so simple to make as well!

Ingredients

Cookie Dough

  • ½ cup unsalted butter softened, if using salted butter, omit salt in recipe
  • ¾ cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all purpose flour
  • 14 oz sweetened condensed milk
  • ¼ teaspoon salt
  • 1 cup mini chocolate chips
  • optional 1/2 cup Birthday or seasonal sprinkles of choice

Chocolate Layer:

  • 1 cup chocolate chips
  • 2 tablespoons unsalted butter can also use salted
  • Sprinkles of Birthday or seasonal sprinkles of choice

Instructions

Treating Flour for Safety:

  • First start by treating your flour. Spread the flour on a large plate or baking dish to fit in your microwave. Microwave for about 1 minute, adding additional 15 second increments as needed, until the flour reaches a temperature of 160 F.  OR, heat treat the flour by spreading it out on a baking sheet and baking it at 350 degrees Fahrenheit for 5 minutes.  Set aside.
  • Line a square 8inch pan with parchment paper or foil, set aside.

Cookie Dough

  • Using a mixer, cream the butter and brown sugar together for a couple minutes until it is light and fluffy for 2-3 minutes.
  • Mix in the vanilla.
  • Alternate adding the flour, and sweetened condensed milk, mixing on low, until everything is completely combined.
  • Stir in the salt and mini chocolate chips or whatever add-ins you want.  We went for some sprinkles with the chocolate chips!
  • Press the dough into the prepared pan in an even layer.
  • Place it in the fridge to chill for about 1-2 hours.

Chocolate Layer:

  • Add the chocolate chips and butter to a microwave safe bowl and microwave in 30 second increments until mixture is smooth by stirring at each increment.
  • Spread the chocolate evenly over the cookie dough.
  • Add more sprinkles for fun!
  • Place the bars in the fridge for another hour, up to overnight.
  • Carefully slice into bars and keep bars refrigerated until ready to serve.
