Starbucks Banana Bread - Sugar-Free Option

This homemade Starbucks Banana Bread Copycat Recipe is one of those classic quick breads we just can't do without!  Enjoy this easy copycat banana bread loaded with ripe bananas and walnuts to start out your day or as a snack any time of the day!

Ingredients

  • 2 cups flour use 1 cup all purpose + 1/2 cup whole white wheat flour for healthier option.
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 egg
  • 1⅛ cup sugar or sugar-free option like Lakanto's monkfruit baking sugar
  • ½ cup canola oil or vegetable oil or for sugar-free option, you can use unsweetened applesauce
  • 2 tablespoons milk of choice or buttermilk
  • ½ teaspoon vanilla extract
  • 3 bananas mashed very well
  • ½ cup chopped walnuts optional

Instructions

  • Preheat oven to 325. Grease a 9x5x3 loaf pan and dust with flour or line with parchment paper and spray with non-stick cooking spray.
  • Whisk together the flour, baking soda, and salt; set aside.
  • Mix the egg, sugar, and oil/applesauce until combined.
  • Add the flour mixture to the egg mixture and mix together. Mixture will be thick. Add the milk, vanilla, and mashed bananas and mix well, without overmixing your batter too much.
  • Fold 1/2 cup of chopped walnuts and pour batter into prepared loaf pan.
  • Top the batter with remaining 1/3 cup of walnuts.
  • Bake for 45-60 minutes until a toothpick comes out clean.

Notes

  • Can also be baked in an 8x4 but bake longer, 70 - 95 minutes.
  • Add 1-2 teaspoons of cinnamon to the batter for more spiced flavor!
  • Chocolate chips always acceptable.
  • Store in an airtight container on the counter for 2-3 days or in the refrigerator for 5-6 days.
  • For Freezing:  Tightly wrap the loaf in plastic wrap. Then wrap them in aluminum foil or in a large ziplock freezer bag. Freeze for up to 3-4 months. Thaw in the refrigerator or room temperature.
