Candy Cookie Pie

After the holidays, use your leftover candy and make a fun and decadent Leftover Candy Cookie Pie!  Transform those yummy candies into a decadent treat with cookie dough! Voila... Scrumptious Cookie Pie Heaven!

Ingredients

Leftover Candy Cookie Pie

  • ½ cup unsalted butter melted
  • 1 large egg
  • cup light brown sugar packed
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 ⅓ cups + 2 tablespoons all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup semi-sweet chocolate chips milk or white or mixture
  • ½ cup M&M's
  • Candies like peanut butter cups caramel truffles, mini candy bars, candy eggs, etc.

Easy Buttercream Frosting

  • ¼ cup unsalted butter softened
  • 2 cups powdered sugar
  • Pinch of salt
  • 1-2 tablespoons milk of choice
  • food coloring or gel

Adding to the Top:

  • Sprinkles, candies, b-day candles

Instructions

Leftover Candy Cookie Pie

  • Preheat oven to 350F. Spray a 9-inch pie dish very well with non-stick cooking spray, set aside,
  • Place butter in microwaveable bowl and microwave until melted, about a minute.
  • Let butter cool a minute or two and then, add the sugars, egg and vanilla. Whisk until smooth.
  • Add the flour, salt, and baking soda and continue whisking until combined, without overmixing.
  • Stir in most of the m&m's except what you are adding on top, along with the chocolate chips to the cookie batter
  • Turn batter out into prepared pie dish, smoothing the top lightly with a spatula.
  • Add your candies into the batter, pushing them down level with the dough, then add the remaining M&M's to the top of the batter as well.
  • Bake for about 25 to 28 minutes, or until a toothpick inserted in the center comes out mostly clean, or with a few moist crumbs, but no batter. If you prefer a more well-done cookie pie, bake a few minutes longer.
  • Allow pie to cool in dish for at least 30 minutes before slicing and serving. To decorate, use my Easy Buttercream Frosting!

Easy Buttercream Frosting or tub of pre-made frosting

  • Using mixer, on low mix the soften butter, powdered sugar, salt and milk and mix together for 1-2 minutes. Add more milk for thinning, add more powdered sugar for thickening if needed. Add food coloring or gel to get color preferred.
  • Place frosting in pastry bag with a large star tube of choice and pipe a border around the cookie's edge.

Adding to the Top:

  • Add sprinkles, candies, candles for birthdays! and whatever else you want for any occasion!

Pie will keep airtight at room temperature for up to 1 week
