OMG Chocolate Cheesecake Stuffed Strawberries

OMG! OMG!  Who could ever resist delicious bite-sized Chocolate Cheesecake Stuffed Strawberries? We’ve got the best of both worlds with creamy, dreamy chocolate cheesecake stuffed in juicy, sweetened ripe strawberries! If this isn’t love, then I don’t know what is?

Ingredients

  • 8 oz full fat cream cheese softened for creamy cheesecake!
  • ¼ cup powdered sugar or healthy sugar for Keto, use Lakanto powdered sugar
  • 1 ½ Tablespoons cocoa powder
  • 1 teaspoon vanilla
  • 2 tablespoons butter softened
  • 3 tablespoons semi-sweet chocolate melted (use sugar free chocolate chips for Keto option)
  • 1 cup whipped cream Can also whip up 1/2 cup of whipping cream to fold in for Keto option.

Instructions

  • Wash and dry the strawberries. Then hull the berries by using a paring knife or strawberry huller by removing the stems and cut a small slice or sliver from the bottom so they stand upright. 
  • Mix the cream cheese, sugar and cocoa in a mixer on high speed. Add vanilla and softened butter and mix.
  • Add melted chocolate, mix.
  • Add in the whipped cream and and mix until combined.
  • Put the mixture into a pastry bag with a large tip or put into a plastic bag and cut the corner off.
  • Pipe the cheesecake filling into the strawberries.
  • Sprinkle with shaved chocolate, sprinkles or make some chocolate hearts with some melted chocolate.  In a small bowl, just microwave 3/4 cup of chocolate chips or chocolate bar; stir chocolate in 30 second increments and once the chocolate is melted, then place in a piping bag to pipe some cute little hearts.  Mixture may be too hot to handle, so let it cool down a little if it is too hot. Then, pipe some hearts on a baking sheet lined with parchment paper.  Freeze until set up and then place them on top of the cheesecake!
  • Refrigerate until ready to serve. The strawberries are best served the same day they are filled.

Notes

Other options:
After you have hulled and slivered the bottom of the strawberries, you can dip the bottoms in melted chocolate and them dip them in Oreo cookie crumbs as an added treat. Enjoy!
If you don't want chocolate cheesecake and want to opt for traditional, just omit the chocolate cocoa and melted chocolate. Add a couple of teaspoons of lemon juice and sprinkle them with graham cracker crumbs. Can also dip the bottoms with white, milk or dark chocolate and dip in more graham cracker crumbs. For white chocolate cheesecake, substitute white chocolate for the melted chocolate.
You can also add some melted chocolate inside the strawberries for an extra surprise! :)
