This old-fashioned Very Berry Biscuit Cobbler is one of the most comforting desserts for summertime! with the easiest, homemade biscuit dough OK? It’s the ultimateeasy traditional dessert that brings everyone to the table!
4 ½ to 5cupsfresh berries of choicecleaned and sliced if needed (we used blackberries, blueberries and strawberries)
optional: 1 lemon zested and juiced
3tablespoonscornstarch
1teaspoonvanilla extract
¼cupwhite sugar
1cupall-purpose flour
¼cup+ 2 tablespoons powdered sugar
½tablespoonbaking powder
½teaspoonsalt
¼cupcold butter diced
½cuphalf & halfheavy cream, buttermilk or any milk of choice
Instructions
Preheat oven to 350 degrees. Spray an 8x8 baking pan with nonstick cooking spray.
In a medium-size mixing bowl, toss berries with lemon zest and juice, cornstarch, vanilla, and sugar and transfer to baking pan spreading out evenly.
In a large mixing bowl, stir together flour, powdered sugar, baking powder, and salt. Use a food processor or a pastry cutter to cut in butter until it resembles a course meal.
Pour in half and half (or preferred liquid) and stir to form a thick batter, but don't overmix.
Scoop the batter on top of the berries to form cobbler on top.
Bake in the preheated oven for 1 hour.
Remove the cobbler from the oven and let it cool for at least 20 minutes, so cobbler thickens.
Spoon the cobbler into bowls and serve with ice cream if you like.
