Instructions
Preheat oven to 350 degrees. Grease a 9 x 5 inch loaf pan or line with parchment paper and spray with non-stick cooking spray and set aside.
Maple Apple Pecan Bread
In a mixing bowl, whisk together the flour, cinnamon, baking soda, salt, and baking powder and set aside.
In another mixing bowl, whisk the applesauce/egg, oil and syrup together well and then add in the dry ingredients into the wet mixture and mix together using rubber spatula or wooden spoon.
Fold in the apple and pecans and then pour and spread batter into baking pan.
Bake 45-55 minutes, or until a toothpick inserted near the center comes out clean.
Allow the bread to cool in the pan and transfer to platter or wire rack to glaze, optional.
Buttery Maple Glaze
Using microwave, melt the butter and maple syrup together for 1 ½ - 2 minutes. Once the butter has melted, remove from microwave and whisk in the sifted confectioners’ sugar and salt. Set glaze aside and allow to cool and thicken while cookies cool. If icing is too thick, heat up in microwave 15-30 second increments to get icing consistency needed.
