Best of Both World Brookie Bars = Cookie Brownie Bars Recipe

‘Best of Both Worlds’ Brookie Bars definitely prevail the best of both worlds when you bake ultra chocolatey brownies and soft-batch chocolate chip cookies together and it's amaze-balls!  Great for picnics, bake sales, potlucks, 4th of July, Easter and chocoholics!

Ingredients

Brownie Dough:

  • cup granulated sugar
  • 5 tablespoons unsalted butter
  • ½ cup unsweetened cocoa powder
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ½ cup all-purpose flour
  • ½ teaspoon baking powder
  • Dash of Salt
  • 1 cup white chocolate chips or chunks

Chocolate Chip Cookie Dough:

  • ½ cup butter cold
  • cup + 2 Tablespoons white sugar
  • ½ cup brown sugar
  • 1 large egg
  • ½ teaspoon vanilla extract optional
  • 1 ½ cups all-purpose flour
  • Heaping ¼ teaspoon baking soda
  • Heaping ¼ teaspoon salt
  • 1 cup semi-sweet chocolate chips + 1/2 cup mini chocolate chips or whatever you want to use.

Instructions

  • Preheat oven to 350ºF.

Brownie Dough

  • Place the sugar, butter, and cocoa in large, microwave-safe bowl and microwave in 20 second intervals until the butter is completely melted and stir together until smooth and creamy.
  • Add the egg until completely incorporated.
  • Stir in the vanilla extract, optional.
  • Add the flour, baking powder, and salt, stirring together until smooth, then stir in white chocolate chips and set aside.

Chocolate Chip Cookie Dough

  • Melt the butter in a large microwave safe bowl for 30-45 seconds until melted. (If butter is too hot, let it cool just a bit).
  • Stir in the sugars. Add vanilla and egg and mix well.
  • Combine dry ingredients together and stir into the butter/sugar mixture and mix together.
  • Stir in chocolate chips.
  • Scoop Cookie dough (about 2 tbsp) into a parchment paper lined or sprayed with non-stick cooking spray prepared 9x13 pan, randomly in pan.
  • Fill in the spaces with scoops of brownie dough. 
  • Just keep adding scoops of each dough until finished using dough up. Smush the cookie dough and brownie scoops down so they touch each other. Add some extra chocolate chips on top and sprinkles if you want to make it more celebratory!
  • Bake for 25-28 minutes. Remember it will continue to cook as it cools so be careful not to overbake. Check it at the 25 minute mark.
  • Remove from oven and place on a cooing rack to finish cooling.
  • Once cooled, cut into squares and serve.
  • Store in airtight container.
