Apple Zucchini Bread - Vegan Option

Ingredients

Apple Zucchini Bread Recipe- Vegan Option

  • cups shredded zucchini 1 large zucchini or 2 small
  • 1 apple grated or chopped, add more apple if you wish
  • 1 cup unsweetened applesauce or can replace with 3 eggs or use a combination of both applesauce and eggs
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • ¾ cup oil of choice I used olive oil
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour or flour like spelt or whole white wheat flour (I used 1/2 all purpose flour and 1/2 whole white wheat flour)
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon - add 1 more teaspoon if you want more cinnamon flavor to come through)

Instructions

Apple Zucchini Bread - Vegan Option

  • Preheat oven to 375 degrees
  • Shred or grate 1 large zucchini using food processor or grater/shredder.
  • Grate or chop 1 to 2 large apples.
  • If zucchini and/or apple is extra watery, you can place them in some paper towel and let the water soak up it up to get rid of the excess water, if you wish.
  • In a large bowl, combine zucchini, apples, applesauce, sugars, oil and vanilla together and mix well.
  • In another bowl, combine flour, salt, baking soda and cinnamon & whisk together.
  • Add, flour mixture to wet mixture and mix & let sit for 15 minutes
  • Place mixture into a 9x5" bread pan & bake for 70-75 minutes. *Check at 60 minutes with a toothpick to check progress, mine took 70 minutes. Zucchini bread is done when toothpick pulls clean.
  • Best served next day or a few hours after it’s made.
