Ingredients
GRAHAM CRACKER CRUST
1 ½cupsgraham cracker crumbs or cookie crumbs
1tablespoonsugar
6tablespoonsmelted butter
CREAM CHEESE LAYER
16ouncescream cheese softened
¾cuppowdered sugar
1teaspoonvanilla
8ouncesCool Whip or whipped cream
COCONUT PUDDING LAYER
3 ¼cupsmilksee homemade coconut pudding recipe in notes if you want to make it from scratch
In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter together.
Press the mixture into a 9x13 dish. Flatten the mixture using the bottom of a flat glass. Place in the freezer for 30 minutes.
CREAM CHEESE LAYER
In a medium bowl, beat cream cheese and powdered sugar using a hand mixer. Fold in 8 ounces of Cool Whip. Spread over graham cracker crust.
PUDDING LAYER
Combine the 3 ¼ cups milk and 2 instant coconut pudding mixes together and whisk together for 1 to 2 minutes, or until smooth and thickened. Pour over cream cheese layer. Also there is the option to make homemade coconut pudding in notes below.
TOPPINGS
Spread whipped cream on top and sprinkle with toasted coconut. Can also add some caramel or chocolate sauce or chocolate chips for additional flavors!
Refrigerate for several hours before serving.
Notes
Make homemade coconut pudding by doubling recipe and let cool before adding on top of cream cheese layer if you want to make your own pudding.
