Starbucks Copycat Coffee Cake
- 1 15.25 oz. yellow cake mix plus ingredients to make cake
- 1 ½ - 2 cups blackberries or any add-ins you wish
- 1 cup salted butter cold straight from fridge, if using unsalted butter, add ¼ teaspoon salt
- 2 ¼ cups all-purpose flour
- 1 ½ tablespoons cinnamon
- 1 ¾ cups brown sugar
- 1 ½ tablespoons vanilla extract
- powdered sugar for dusting
Starbucks Copycat Coffee Cake
Preheat oven to 350F and spray a 9x13 pan with non-stick spray.
Prepare cake mix in large bowl according boxed instructions.
Fold in the blackberries or any add-ins.
Pour and scrape cake batter into pan and bake for 17-22 minutes and make the crumb topping while the cake is baking. You want to pull it from the oven when the center is just barely set and not fully baked to add the crumb topping.
Crumb Topping
Using a mixer, cold butter, flour, cinnamon, brown sugar and vanilla until all crumbly. Break up crumb topping into marble size pieces with fingers.
Remove cake from oven and sprinkle the crumb topping on top of the cake.
Put back in oven and bake an additional 10-15 minutes.
Let cake cool fully then dust with powdered sugar if desired.
Cut into squares and serve.
