Crumbl Churro Cookies - Copycat Recipe

These Crumbl Copycat Churro Cookies with Churro Buttercream Frosting are the perfect combination of a crispy, sugar-coated churro and the soft and chewy melt-in-your-mouth goodness of a cookie with a delicious swirl of cinnamon buttercream frosting on top.

Ingredients

Crumbl Churro Cookies

    Cinnamon Sugar

    • ½ cup sugar
    • 1-2 tablespoons cinnamon

    Crumbl Churro Cookie Dough

    • 1 cup unsalted butter straight from the fridge
    • 1 cup granulated sugar
    • ¼ cup brown sugar packed
    • 1 large egg
    • 1 teaspoon vanilla
    • 2 ½ cups all-purpose flour
    • 1 tablespoon cornstarch
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • 1 tablespoon cinnamon
    • ¼ teaspoon salt

    Churro Cinnamon Buttercream Frosting

    • ¾ cup unsalted butter
    • 3 cups powdered sugar If you want to do a combination of powdered sugar and brown sugar - Use ¼ cup of brown sugar and 2 ¼ cups powdered sugar)
    • 2 tablespoons milk of choice
    • 1 ½ teaspoons vanilla extract
    • 1 tablespoon cinnamon
    • 2-3 pinches salt

    Instructions

    • Preheat oven to 350 degree F oven and line 2 baking sheets with parchment paper or silpat liners.

    Cinnamon Sugar

    • Make cinnamon sugar mixture, set aside.

    Crumbl Churro Cookie Dough

    • Using mixer, beat butter in your mixing bowl until it turns a pale yellow about 2-3 minutes.
    • Beat in sugars until the mixture is fluffy.
    • Mix in egg, followed by vanilla until well combined.
    • Add flour, cornstarch, baking powder, baking soda, cinnamon and salt to wet mixture and mix together to form your dough.
    • Using a large cookie scoop (1/4 cup scoop), scoop cookies and then roll in cinnamon sugar mixture. Very lightly pat down cookie dough or not at all, depending on thickness you want cookies. Cookies will spread out, so be sure to keep the unbaked cookie dough thick on the baking sheet.
    • Bake cookies for 10-12 minutes to partially under-bake the dough, to get the crispy, golden brown edges on the outside and the soft and chewy inside.

    Cookie Tip: For perfectly circular cookies, use a circular bowl and swirl around your freshly baked cookie to make edges clean, if desired.

      Churro Cinnamon Buttercream Frosting

      • Once cookies are cooled for frosting, beat your butter until fluffy for about 2-3 minutes. Add powdered sugar, cinnamon, milk and vanilla until the frosting is fluffy.
      • Add icing to a piping/ziploc bag using tip preferred, circular or star tip and pipe a swirl on top.
      • Optional:  Lightly sprinkle some cinnamon sugar on top for the crunchy churro effect!

      Storing Cookies
      • Store at room temperature in airtight container for up to a week.
      • For longer storage, store these in the fridge for up to 12 days.
