Original Copycat Shoney’s Strawberry Pie

Nothing screams spring and summertime quite like the big burst of sweet and tangy flavor of freshly picked strawberries. And what could be better than taking that flavor and turning it into an easy-to-make, delicious Original Copycat Shoney’s Strawberry Pie?

Ingredients

  • 1 9 inch Pie crust, baked original recipe uses a baked pastry pie crust-homemade or store-bought frozen or refrigerated, but you could use a no-bake Oreo crust or a graham cracker crust as another option.
  • ¾ cup sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 1 package 3 ounces strawberry gelatin
  • 4 cups fresh strawberries quartered or sliced
  • Whipped cream or ice cream optional

Instructions

  • Once you’ve decided on the pie crust you want to use and it’s ready for filling, it’s time to make the strawberry pie filling.
  • Slice fresh strawberries and place in a large bowl; set aside.
  • In a small saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil and keep cooking and stirring until thickened, about 2 minutes. Remove pan from the heat and stir in gelatin until dissolved.
  • Refrigerate strawberry jello mixture until slightly cooled, 15-20 minutes.
  • Pour gelatin mixture over berries then transfer into the pie shell.
  • Refrigerate until set about 2 hours.
  • Serve with whipped cream or ice cream for a refreshing treat!
