- 1 cup brown sugar packed
- ¼ cup canola oil or can use coconut oil, melted and cooled
- ¾ cup creamy peanut butter or can use sugar-free or natural peanut butter if desired
- 1 cup all-purpose flour
- ¼ cup almond milk or milk of choice
- ¾ cup peanut butter cups or if you want vegan option, use vegan peanut butter cups
How to Make Peanut Butter Cup Blondies
Preheat oven to 350 degrees. Line an 8x8 inch baking pan with parchment paper and spray with non-stick cooking spray. Set aside.
In a large bowl using mixer or whisk, beat together brown sugar, peanut butter and oil until smooth.
Add the flour and mix together until combined. Add in milk and mix together. Fold in peanut butter cups.
Transfer blondie batter into prepared pan and place in the oven to bake for 25-27 minutes, or until center is set and not wet in the center. The middle of the blondies will firm up while they cool.
Cool blondies in pan completely before cutting into large or small squares.
- Take the blondies out when they edges look browned, but the middle looks a little underdone. As they cool out of the oven, they will continue to bake. That way you'll get those moist, gooey fudgy blondies you've been dreaming of.
