Super Healthy Raspberry Oatmeal Bars

These Healthy Raspberry Oatmeal Bars are the perfect healthy snack when you want fruity oat bars loaded with raspberry flavor!  This raspberry oatmeal bar recipe is super easy to make with sugar-free, vegan and gluten free options!

Ingredients

  • 6 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract or lemon zest
  • 1 cup oat flour or 1 minute quick oats or gluten free quick oats or GF oat flour if you want gluten free option
  • 1 cup old fashioned rolled oats gluten free old fashioned rolled oats or gluten free organic rolled oats
  • ½ cup monk fruit sugar or sugar of choice
  • 1 ½ teaspoon cornstarch
  • 1 teaspoon baking powder
  • ½ teaspoon salt or sea salt
  • ¾ cup sugar-free seedless raspberry jam or preserves or jam/preserves of choice

Instructions

  • Preheat oven to 375°F. Generously grease an 8 x 8-inch pan.
  • In medium bowl, combine melted butter. oats/flour, sugar, cornstarch, baking powder, vanilla and salt until thoroughly blended.
  • Press 1 cup of oat mixture firmly into bottom of the prepared pan. Spread raspberry jam evenly on top.
  • Sprinkle remaining oat mixture over jam, then pat firmly to make top layer smooth and even.
  • Bake 20-25 minutes or until top is lightly browned and firm. Cool bars in pan for 30 minutes on wire rack. Cut into 16 squares and serve at room temperature.

Notes

  • We used unsalted butter in these bars, but if you love peanut butter, you could use 3 tablespoons peanut butter and 3 tablespoons butter as well!
