Christmas Peppermint Oreo Truffles

- 36 Oreo cookies
- 8 ounces cream cheese softened
- ½ teaspoon peppermint extract can add up to 1 teaspoon if you want more peppermint flavor
- 16 ounces white milk or dark chocolate melting wafers, I use Ghiradelli (can also use chocolate chips)
- 3 Crushed candy canes or add sprinkles for tops
Pulse Oreo cookies in a food processor until cookies are crumbs.
Add cream cheese and peppermint extract and pulse until the mixture is well combined and smooth.
Using a cookie scoop or a spoon, scoop some dough into your hands and roll one-inch balls and place balls on cookie sheet.
Place the truffle balls in the freezer until well chilled, at least 15 minutes to an hour.
Melt the chocolate melts in microwave in 30-second intervals until melted and smooth. Stir in between each interval.
Remove Oreo cookie truffles from freezer and one at a time, dip the balls into the chocolate and gently remove using a fork. Shake off the excess chocolate and place back onto the tray.
Top with crushed candy canes or sprinkles.
Transfer truffles to refrigerator for 1 hour to set.
