Easy Brownie Truffles

These Brownie Truffles are fun and super easy treat to make for the holidays!  Who can resist gooey, fudgey brownies rolled and dipped in chocolate!  Perfect for all of your holiday, party or family get-togethers!

Ingredients

Brownie Truffles

  • 1 pan baked brownies in 9x13 pan I used Ghirardelli Brownie Mix, also see Textures of Brownie Truffles You Can Make in post above for more options
  • 4 ounces cream cheese softened
  • 16 ounces or more if needed Ghirardelli White, Milk Chocolate or Dark Chocolate Melting Wafers (I used all 3 chocolates, melted 8 ounces of each and then took the leftovers and used that chocolate for the tops for chocolate drizzles)
  • garnishes: sprinkles or cocoa powder

Instructions

  • Follow the directions on the boxed brownie mix and bake as instructed. Once the brownies are fully baked, allow them to cool completely.
  • Take the brownies and cut off any hard edges keeping only the soft brownies.
  • Place the brownies into a food processor. Pulse to crumble the brownies.
  • Add the cream cheese to the food processor and pulse until the brownies and cream cheese are fully incorporated. The more you pulse the creamier the truffles will be, so if you want more brownie texture, pulse without overmixing. If you want creamier, pulse mixture more.
  • Using a tablespoon or a 1 inch cookie scoop, scoop the brownie mixture onto a cookie sheet that has been lined with parchment paper. Place into the freezer for about 20-30 minutes so brownies will be easier to roll into balls.
  • Remove the cookie sheet from freezer and start rolling the brownie dough into rounder balls.
  • Place the round brownie dough balls back into the freezer for another 10 minutes.
  • Start melting the chocolate wafers in a microwave safe bowl. Start with 30 seconds seconds and stir. Then I do 15 second increments as needed until the chocolate is melted, stirring between each interval.
  • Dip the brownie truffles into the chocolate, tapping to let any excess drip off. Place back on the cookie sheet.
  • If adding sprinkles, do so now before the chocolate hardens. Continue to dip and sprinkle until all of the truffles are complete.
  • If adding chocolate drizzles to tops, just use leftover chocolate you have melted or melt another chocolate flavor and place in a ziplock or pastry bag with a small hole or piping tip and zig zag chocolate drizzles on top.
  • Store truffles in the freezer or fridge until they are ready to serve. Allow them to sit at room temperature for 5 minutes to soften before serving.
