This cozy, spiced up Apple Butter Coffee Cake has all the feel goods for fall baking! Our coffee cake is layered with autumn-inspired spices, apples and of course--apple butter with a delicious brown sugar cinnamon crumble on top with drizzles of delicious vanilla glaze!

Ingredients
Dry Ingredients
2cupsall-purpose flour
1teaspoonbaking soda
½teaspoonsalt
½teaspoonground nutmeg
½teaspoonground cinnamon
½teaspoonground cloves
Wet Ingredients
¾cupsugar
½cupunsalted butter at room temperature
2eggs
1cupApple Butter
½cupGreek yogurt
1applecored and chopped
Crumb Topping
¼cupbrown sugar
1Tablespoonground cinnamon
½cupflour
¼cupbutter½ stick, softened at room temperature
½cupwalnuts or pecansoptional
Vanilla Glaze
1cupconfectioners sugar
2tablespoonsheavy cream or milk of choice
1teaspoonvanilla extract
A couple pinches of salt
¼teaspoonground cinnamon
Instructions
How to Make the Crumb Topping
Use a fork to mix the brown sugar, cinnamon, flour, and softened butter in a small bowl until you have a coarse, lumpy mixture. Set aside in the fridge while you make the batter.
Make the Apple Butter Coffee Cake
Set the oven to 350F and spray an 8x8 or 9x9 pan lightly with cooking spray and/or line with parchment paper for easy removal.
Whisk together the dry ingredients and set aside.
Cream the butter and the sugar until light and fluffy. Beat in the eggs, one at a time. Stir in the apple butter.
Add the dry ingredients to the wet ingredients alternately with the yogurt, beginning and ending with the dry. Mix just until combined, don't over beat.
Spread the batter in the prepared pan and Top with cake with the crumb topping.
Bake for about 40-55 minutes, depending on size of pan, or until a toothpick inserted in the center comes out without wet batter clinging to it.
Place cake on a rack while you make the glaze.
How to Make the Vanilla Glaze
Whisk together the powdered sugar, cream/milk, vanilla, cinnamon and salt until combined. Add a little more cream for creamier, thinner glaze and a little more powdered sugar for thicker glaze until you get the texture you are looking for.
Using a spatula or spoon, drizzle the coffee cake. Serve warm.
