Guinness Brownies

We're winning the day with these Guinness Brownies!  These thick and fudgy chocolate brownies are infused with Guinness Stout Beer (win!) and then topped with delicious vanilla frosting with a hint of chocolate bliss!  These are perfect for St. Patrick's Day, all the game days, parties and anytime you want to party with a fun alcohol flavor twist to your brownies!!

Ingredients

Guinness Brownies

  • 1 cup all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • ½ teaspoon salt
  • 6 tablespoons butter cubed
  • 8 ounces dark bittersweet chocolate chips or bar chopped
  • ¾ cup white chocolate chips
  • 4 large eggs room temperature
  • 1 cup granulated sugar
  • 1 cup/8 ounces Guinness Extra Stout beer room temperature, no foam

Layer of chocolate chips

  • 1 cup semi-sweet chocolate chips

Guinness Beer, Irish Cream or Irish Whisky Frosting

  • ½ cup unsalted butter room temperature
  • 2 ½ - 3 cups powdered sugar
  • optional: ½ - 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch salt
  • 3 tablespoons of Guinness Stout or choose Irish Cream or Irish Whiskey

Instructions

  • Preheat the oven to 375 F. Line a 9x13-inch baking pan with parchment paper or tinfoil. Set aside.

Guinness Brownies

  • In a medium bowl, whisk together flour, (optional: cocoa powder), and salt until evenly combined. Set aside.
  • In a microwavable bowl, place butter, bittersweet chocolate, and white chocolate chips in microwave in 30 second increments until melted.
  • Using mixer, beat eggs and sugar on high speed until light and fluffy, about 3 minutes.
  • Add melted chocolate mixture to the eggs and sugar mixture, beating until combined.
  • Beat the flour ingredient mixture into the melted chocolate mixture. Whisk in the Guinness Stout beer by hand, batter will be thin.
  • Pour the batter into the prepared baking pan.

Layer of chocolate chips

  • Sprinkle top of brownies with semisweet chocolate chips evenly.

Baking Brownies

  • Bake 25 to 30 minutes on center rack in the oven, until a toothpick inserted in the center comes out clean.
  • Let the brownies cool, uncovered, to room temperature.

Guinness Beer, Irish Cream or Irish Whisky Frosting

  • Using mixer, mix together all the ingredients until light and fluffy. Spread frosting on top of brownies and add sprinkles or drizzle some salted caramel on top for an extra special treat! Double Frosting for extra frosting on top.
  • Cut and serve!
