Holiday Eggnog Bread

Here's a real sweet quick eggnog bread that is great for the holidays, that you will love! Add cranberries and nuts if you want!

Ingredients

Eggnog Bread

  • 2 large eggs
  • 1 cup sugar
  • 1 cup eggnog
  • ½ cup butter melted
  • 1 teaspoon vanilla extract
  • 2 teaspoons rum extract
  • 2 - ¼ cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon nutmeg
  • Optional: 2/3 cup dried cranberries

Eggnog Glaze

  • 1 cup confectioners sugar
  • ¼ teaspoon nutmeg
  • Add enough eggnog to make it a glaze 1-4 tablespoons depending on thickness wanted
  • Optional: Add a handful of cranberries and pecans on top if you desire.

Instructions

Eggnog Bread

  • In a large bowl, beat eggs, then add in sugar, eggnog, melted butter, vanilla and rum extracts, blending well.
  • Add remaining ingredients, flour, baking powder and nutmeg and it's optional if you want to add in 2/3 cup dried cranberries, stir until just combined.
  • Pour into a greased 9" X 5" loaf pan and bake at 350 degrees for 45 to 50 minutes. (Bake longer if needed).
  • Makes one loaf.

Eggnog Glaze

  • In a small bowl, add confectioners sugar, nutmeg and add enough eggnog to make it a glaze (1-4 tablespoons depending on thickness wanted)
  • Whisk together and drizzle on bread.
  • Optional: Add a handful of cranberries and pecans on top if you desire.

Notes

Don't over mix bread batter!
