Red Velvet Santa {Cake Mix} Cookies!
Holiday Santa Cookies jingling all the way! Oh what fun in some Red Velvet!!! :)

Ingredients
- 1 15.25 oz box red velvet cake mix
- ⅓ cup Canola Vegetable or Coconut Oil
- 2 large Eggs
- 1 cup White Chocolate Chips
- 1 cup Mini Red and Green M&Ms
Instructions
- Preheat oven to 350 degrees and spray cookie sheet with non-stick spray.
- In a mixing bowl, combine cake mix, oil and eggs together using a rubber spatula until just combined. Add in chocolate chips. Dough will be stiff and sticky.
- Lightly spray a 1.5 – 2 Tbsp cookie scoop with cooking spray to help the dough release from the scoop. Scoop batter onto prepared baking sheets, about 2-3 inches apart.
- Bake 11-12 minutes. Cookies will look soft and not quite done, but let them cool on the baking sheet for 5 minutes so they can continue to bake.
- Remove to a cooling rack to cool completely.
Notes
Don't overbake for soft and chewy cook-cooks! :)
