Fruity Pebbles Fluffy Donuts

Fruity Pebbles Fluffy Baked Donuts!  These light, fluffy and fun baked vanilla cake donuts are embellished with Fruity Pebbles cereal inside and on top with a luscious slathering of creamy vanilla frosting.

Ingredients

Fruity Pebble Fluffy Donuts

  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup Greek yogurt can also use sour cream (I used non-flavored Greek yogurt)
  • ¼ cup canola oil
  • 1 egg
  • ¼ cup Fruity Pebbles add up to 1/2 cup for more color.

Vanilla Frosting

  • 1 tub vanilla frosting I used Simple Mills Organic Vanilla Frosting

    Vanilla Glaze

    • 2 cups confectioners' sugar
    • tbsp milk
    • ½ teaspoon vanilla extract
    • 2 Pinches salt
    • Fruity Pebbles for decoration on top

    • additional: can also use colorful sprinkles if desired.

    Instructions

    Fruity Pebble Fluffy Donuts

    • Preheat the oven to 350°F and brush your donut pan with oil or spray with non-stick cooking spray.
    • Simply combine the flour, sugar, baking soda, and salt in a medium bowl.
    • Whisk in the Greek yogurt (can also use sour cream), canola oil and an egg until just until combined. Stir in some Fruity Pebbles and you're ready to start piping the donuts!
    • Place a large round tip on the large decorating pastry bag or snip the corner of a zip-lock bag and fill the bag with dough and pipe around each well until it’s about 2/3 - 3/4 full.  They will rise, so do not overfill.
    • Bake for 8–10 minutes, or until the donuts spring back when lightly pressed. Remove from the oven to a cooling rack.
    • Let the donuts cool in the pan for 5 minutes before releasing them, then top with frosting or glaze.

    Vanilla Frosting with Fruity Pebbles

    • With the vanilla frosting, we used Simple Mills frosting.  I love it because it's organic and tastes amazing and I prefer it to a vanilla glaze with these donuts.  I think the frosting balances out the donuts nicely, whereas I think the glaze would be more over the top with the sugar factor, but it's up to you.  The frosting will be stiff, so place it in the microwave for 15-20 seconds until it's easily spreadable.  Spread on top of donuts using an offset spatula or back of a spoon.  Sprinkle some Fruity Pebbles on top to your liking!

    Vanilla Glaze with Fruity Pebbles

    • Making your own vanilla glaze is simple, just 2 cups confectioner's sugar, 1/2 teaspoon vanilla and 1 - 2 tablespoons of milk and a pinch of salt.  Dip the donuts in the vanilla glaze, return to the wire rack, and immediately top with some Fruity Pebbles. Allow glaze to set at room temperature for about 30 minutes before stacking or serving.

    Notes

    Besides, these vanilla donuts are also a great base recipe to use to make your own flavors by adding other extract flavors, berries, spices, mini chocolate chips, various frosting and glaze flavors and sprinkles galore!   Add your own favorite cereal if you want to keep the cereal-donut vibe!  The  fluffy texture of the donuts are amazing!!
    Could also swap out all-purpose flour with gluten free flour or whole wheat flour.  Fruity Pebbles are gluten free as well.
