What is Chocolate Brownie Mousse Cream Pie?

This triple layered pie is essentially a pre-made pie crust filled and baked with a rich, fudgy gooey brownie layer, topped with a creamy chocolate mousse layer, and then topped with a thick, fluffy mound of whipped cream on top of that!

And of course, grated chocolate curls for some extra chocolate love, because as you know we never seem to have enough chocolate, do we?

Why We Love This Chocolate Brownie Mousse Cream Pie

One of my favorite pies growing up was always chocolate cream pie when we had reunions, get-togethers or Sundays!

Well, as you know, brownies are also one of my favorites, so putting them together in a luscious, tempting pie was the ultimate goal here, with a few minor change-ups. Not only is it tempting, it’s also very pretty with all those delightful layers, when you cut into it and serve it to friends and family.

Ultimate Triple Layer Chocolate Brownie Mousse Cream Pie

Ingredients You Need

  • 1  9-inch single pie crust, unbaked homemade or store-bought refrigerated

Brownie Layer

Chocolate Mousse Layer

Whipped Topping Layer

  • whipped cream
  • 1 bar chocolate, I used Hershey’s, for grating on top of pie

How to Make Layered Brownie Pie 

  1. Prepare 9″ pie crust or use pre-made pie crust, set aside in fridge while you make the Brownie layer.

Brownie Layer

  1. In a medium saucepan, melt butter over low heat. Add chocolate, stirring until completely melted.
  2. Remove from heat and stir in sugar. Add flour, eggs, vanilla and salt. making sure all ingredients are mixed in well.
  3. Spread mixture into pie crust. Bake in a preheated 350 degree oven for 25 minutes, until top has a crust and sides are firm. Remove from oven and let cool completely.

Chocolate Mousse Layer

  1. Beat cream cheese until very smooth and creamy. Add in cocoa powder, powdered sugar and vanilla until mixed in. Fold in whipped cream and pour on top of cooled brownie pie. If you are making whipped cream, beat whipping cream until you get stiff peaks and fold in chocolate cream cheese mixture and pour on top of cooled brownie pie.

Whipped Topping Layer

  1. Frost with whipped cream by either using cool whip or whipping heavy cream and powdered sugar until you get stiff peaks.
  2. Using a grater or peeler, shave off chocolate onto whipped topping.
  3. Refrigerate up to 4 hours or overnight and serve.

Shortcut Ideas

  • I bought a pre-made crust and used it so I wouldn’t have to make my own to save a few steps.  If you have a favorite pie crust you just can’t do without, then go for it.
  • For another shortcut – if you want to omit making the home-made brownie layer, you can use a boxed brownie mix and bake for 30 mins. If layering, with other layers though, you might not want to use it all, baking for 20-25 minutes, which means you get extra brownies, use a muffin tin or something like that. Brownies don’t rise that much, so consider this when layering.

Other Serving Options

  • Even though this is a brownie pie, on another note, there’s always the option, you could also change out the brownie layer for a chocolate pudding layer, by just using instant chocolate pudding.  Just wait for it to set up, then add the next layer of chocolate mousse and whipped cream.
  • OR….How about stopping by just making the brownie pie, minus the other 2 layers and serving it with a scoop of ice cream and hot fudge?  Totally yum!  BTW…you can even use a brownie mix in place of the home-made brownies if you wish.

Ingredients
  

  • 1  9-inch single pie crust, unbaked, homemade or store-bought refrigerated

Brownie Layer

  • ½ cup unsalted butter
  • 2 ounces unsweetened chocolate coarsely chopped, or 1/3 cup dark chocolate chips
  • 1 cup sugar
  • ¾ cup all-purpose flour
  • 2 eggs
  • 1 teaspoon vanilla extract
  • pinch of salt

Chocolate Mousse Layer

  • ¾ cup whipping or heavy cream whipped or 1 1/2 cups cup cool whip
  • cup unsweetened cocoa powder add more if desired
  • cup powdered sugar
  • 8 oz cream cheese very softened (microwave for 20 seconds to soften if needed)
  • 1 teaspoon vanilla extract

Whipped Topping Layer

  • 1 ½ cups whipping or heavy cream whipped or 3 cups cool whip, (if making fresh whipped topping, add 1/2 cup powdered sugar to whipping cream for sweetened whipped cream)
  • 1 bar chocolate I used Hershey's, for grating on top of pie

Makes me wanna have it right now. Absolutely irresistible. Though I wonder if it would be as fantastic with brown sugar added. What do you think Kim?
