The secret to the best and creamiest truffles is using sweetened condensed milk, which I readily always have on hand and I love an easy truffle recipe that uses only a handful of ingredients. 

Truffles are one of the best and easiest candy recipes you can make!  Rumor has it, it is always a favorite among those who love to sit around and eat bonbons all day long on the couch watching soap operas, of course… (Hmm…who could that be?)

But of course, no bake easy truffles in general are perfect for holidays and satisfying your sweet tooth or teeth, which ever you call it.  It’s fun to make an assortment of truffles and place them in a box and give them to friends or family.  

Or the usual suspect… Yourself.  Your own personal stash at your own beck and call.  Not naming names…moving on. 🙂

Coatings for Truffles

  • chocolate sprinkles
  • For decorating, you can melt chocolate (about 3 cups good quality dark chocolate chips, semisweet chocolate or milk chocolate chips or chopped chocolate for 12 truffles, reduced amount if only doing a portion), + other decoratives on top like coffee beans or oreo cookie crumbles.
  • You can also roll them powdered sugar or cocoa powder, finely chopped nuts or toasted or sweetened coconut for the the finishing touch!
  • sea salt, optional –  This flavor combination is the perfect balance of sweetness and savoriness, with a hint of saltiness.

How to Make Chocolate Coffee Espresso Truffles

Chocolate Espresso Truffles Recipe

  1. Grease a pan or bowl with butter and set aside.
  2. In a saucepan, over medium heat, melt butter and add the sweetened condensed milk and mix together.
  3. Stir in the cocoa powder and espresso powder and reduce heat to medium low; stirring constantly, until chocolate is melted and mixture is smooth and thick, about 10 – 15 minutes.
  4. Once the chocolate mixture is done when you run the spoon through the center of the mixture and it takes a few seconds to combine again.
  5. Pour mixture into prepared pan/bowl; cover with plastic wrap and refrigerate until cooled completely, about 2 hours or overnight.
  6. When set, scoop dough with a small cookie scoop (tablespoon) or pinch some off and roll the mixture into 12 small balls. (you may need to apply a small amount of butter to your hands to help them from sticking). Place in fridge or freeze while you prepare the final touches. The colder the truffle ball is the better when melting in chocolate.

Coatings for Truffles

  1. Line baking sheet with parchment or wax paper to coat in sprinkles or melted chocolate. To melt chocolate, microwave in 30 second intervals, stirring well between each interval until melted. Dip each ball into chocolate with a fork and shake off excess and place on prepared pan. Add any decorate touch before chocolate sets.
  2. Place in fridge for 15 minutes for chocolate to set.

More Truffle Recipe Variations & Ideas! 

  • You can make your no bake easy truffles all look the same or you can opt to roll them in sprinkles, finely chopped nuts, toasted or fresh sweetened coconut, powdered sugar or cocoa powder. 
  • You can also smother them in the chocolate of your choice.  There is no magic formula to dipping truffles.  It’s a messy task. I find it easier if the truffles are cold. Simply use a fork to lift the truffles out of the chocolate, tapping the fork on the side of the bowl to shake off any excess chocolate. Then place the truffles on a baking tray lined with baking or parchment paper to set.
  • Once covered with chocolate, decorate them with extra drizzles of chocolate, candies, chocolate covered coffee beans, cookie crumbles or anything that looks fun!  Even plain is fine because these have intense chocolate flavor that is amazing, but as far as presentation, they look better when covered with chocolate or sprinkles, etc.

Substitutions for Chocolate Espresso Truffles

If you don’t have espresso powder, you can leave it out completely or replace it with using an equal amount of instant coffee powder or granules.

Notes

Chocolate truffles can be stored at room temperature for a few days in an airtight container, but up to 2 weeks if kept in the refrigerator. Allow time for them to come up to room temperature if you do refrigerate them. Chocolate truffles can also be frozen and served at a later date.

  2. I found this to be a pretty straight-forward recipe and I am an intermediate skill level baker who prepared this with no real effort. I made the following changes as I went: (1) I sifted the espresso and cocoa powder prior to incorporating it into the mixture; and (2) I threw the milk and butter in the pan and melted it down on medium-high heat until it was incorporated, then I turned down the heat and added the other ingredients; and (3) once I had things incorporating, I used an immersion blender to get the product ultra smooth and it stiffened up quickly. I finished with melted hard chocolate exterior and sprinkles. Made nice looking treats that two years ago I would have never dreamed I was capable of making, much less enjoyed making. Total Yield: 16 balls (child’s superball size – about 1.5″ in diameter).

    Flavor profile was great – true espresso/coffee flavored as I imagined, so no problems there. I imagine my kids and grandkids won’t mind one whit. In fact I will use a few as toppers on this Valentine’s Day Cake that I have to do today.

  5. thanks for the fab recipe. I’m not a cook or baker but I found it really easy and i was succes . I thought that might be useful for anyone with a grinder. The taste is very subtle so could use more.

  6. Dark chocolate and coffee – what could be better? Probably, when they meet in a shape of chocolate truffles 🙂 I do love all possible variations of chocolate truffles. Indeed, this is the variation famous in Brazil (Brigadeiro truffles), and it’s so scrumptious. With the addition of espresso, that’s even better!
