Why We Love This Starbucks CopyCat Coffee Crumb Cake Recipe with Blackberries Added In!

  • The original Starbucks coffee cake doesn’t have blackberries, but I had some fresh blackberries looking to be used. Glad I did, they taste so amazing with the sweet coffee cake and streusel!
  • Recipe shortcut!  We used a boxed yellow cake mix, which made this cake light, super moist and easier to prepare!
  • Perfect when you want to impress for brunch or breakfast.
  • The crunchy, baked streusel on top brings everything together and there’s not too much, but again not too little of it.  It’s the perfect amount and it’s soooo good!
  • We loved using the blackberries in this for sure, but you can leave them out or add another kind of fruit or maybe even some chocolate chips!

How to Make Starbucks CopyCat Coffee Crumb Cake Recipe (with Blackberries)

Blackberry Coffee Cake

  1. Preheat oven to 350F and spray a 9×13 pan with non-stick spray.
  2. Prepare cake mix in large bowl according boxed instructions.
  3. Fold in the blackberries or any add-ins.
  4. Pour and scrape cake batter into pan and bake for 17-22 minutes and make the crumb topping while the cake is baking. You want to pull it from the oven when the center is just barely set and not completely fully baked to add the crumb topping.  Depending on what cake mix you use, you can go by the cake mix instructions and see how long that takes for a 9×13 cake to bake.  Just pull it from the oven the last 10-15 minutes for the streusel baking time. 

Crumb Topping

  1. Using a mixer, cold butter, flour, cinnamon, brown sugar and vanilla until all crumbly.  Break up crumb topping into marble size pieces with fingers before adding it to the cake.
  2. Remove the cake from oven and sprinkle the crumb topping on top of the cake.  
  3. Put back in oven and bake an additional 10-15 minutes.
  4. Let cake cool fully then dust with powdered sugar if desired.
  5. Cut into squares and serve.

Coffee Cake Tips

  • Make sure the butter is cold otherwise your streusel topping melt into the coffee cake and make the cake doughy.
  • Be  sure the cake is baked enough before adding the streusel or the streusel topping will sink into the cake.  Depending on what cake mix you use, you can go by the cake mix instructions and see how long that takes for a 9×13 cake to bake.  Just pull it from the oven the last 10-15 minutes for the streusel baking time.
  • It may seem like you have too much streusel made, but trust me, this is the perfect thickness and ratio for this coffee cake.  But, if you want to halve it, that is perfectly fine!
  • I used fresh blackberries, but you could use frozen if you wish.

Storing Starbucks Coffee Cake

Freshly baked coffee cake will keep well for about 1 week in the fridge when properly stored when refrigerating, cover with lid, foil or plastic wrap to prevent cake from drying out.

  • 1 15.25 oz. yellow cake mix plus ingredients to make cake
  • 1 ½ - 2 cups blackberries or any add-ins you wish
  • 1 cup salted butter cold straight from fridge, if using unsalted butter, add ¼ teaspoon salt
  • 2 ¼ cups all-purpose flour
  • 1 ½ tablespoons cinnamon
  • 1 ¾ cups brown sugar
  • 1 ½ tablespoons vanilla extract
  • powdered sugar for dusting
