How to Make Soft Lemon Cookie Recipe 

  1. Preheat oven to 350 degrees.

How to Make the Dough

  1. In a bowl, sift together flour, baking powder, and salt, set aside.
  2. In another bowl, using a mixer, cream together butter and sugar until light and fluffy. Add in lemon juice, milk, eggs, vanilla, almond milk and lemon zest optional and continue mixing until combined.
  3. Add ½ of the dry mixture to the wet mixture and mix.  Add rest of the flour and mix together until combined.

Baking the Super Soft Lemon Glazed Sugar Cookies

  1. Using a medium size cookie scoop, drop scooped cookies out on parchment paper lined baking sheet and bake about 8-10 minutes, or until cookies do not sink or imprint when lightly touched on top. Do not over-bake.  Cookies should not be brown.

Preparing the Lemon Glaze

  1. In a shallow bowl, mix powdered sugar and lemon juice in a bowl. Add in milk and continue stirring until mixed well and it’s a nice thick consistency, yet pourable.
  2. Dip cooled cookies in icing and allow to set on a cookie rack.

Lemon Sugar Cookies

  • ½ cup butter softened
  • 1 cup sugar
  • 2 large eggs
  • cup almond milk you can use regular milk as well
  • 1 teaspoon vanilla extract
  • 3 ¼ cups flour
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • Juice of half a lemon
  • Optional: 1 Tbsp lemon zest

Lemon Icing Glaze

  • 2 cups powdered sugar
  • 3 tablespoons lemon juice 1 ½ lemons
  • 1 tablespoon almond milk or milk

  2. Yes you can. You can freeze it for up to three months. The cookies should be kept in the airtight container at room temperature for at least two hours before being allowed to thaw. I would frost after the fact, but it is up to you. Hope you enjoy, they are soooo good!

    Thinking of some reasons. Lemon Zest: It’s optional on the zest if you want it or not, but yes 1 tablespoon is good. However, if you zest too much of the pith of the lemon, the white stuff under the lemon outer rind, it can be bitter. Baking powder: The normal proportion is about 1 to 2 teaspoons per 1 cup of flour and this uses 3 1/4 cups. This link explains more about baking powder.   4. I made these cookies exactly like the recipe, using 1/2 Tbsp. lemon zest in the cookie dough recipe. The cookies had a bitter after taste. Is the measurement of 4 tsp. baking powder correct? It seemed like a lot. If i make them again, I would use at least 1 whole Tbsp. of lemon zest.
